Summer Squash and Ricotta Casserole

  • Ingredients:
    • 1c. mayonnaise
    • 1c. ricotta, drained
    • 1c. Parmesan cheese, shredded
    • 2 large eggs
    • 2 garlic cloves, peeled and minced
    • 1 tsp. sugar
    • 1/2 tsp. salt
    • 1/2 tsp. black pepper
    • 2 Ib. yellow squashes, sliced
    • 2 Ib. zucchini squashes, sliced
    • 21/2 c. Ritz crackers, crushed
    • 1/2 c. unsalted butter, melted
    • 2 tbsp. fresh chopped basil, for garnish
